I'll start with the head gasket:
It's not that simple. You could try it, but I don't think you'll get the reliability you want, especially should you go turbo. To do it bullet proof, you need the engine and head to take a trip to the machine shop to prep them for a metal head gasket, and install one. Now you can feel safe to throw the power adders in. If you wanted to stay normally aspirated, or were only looking to perform an NA -> turbo swap with no additional boost, you might get away with only getting machine work on the head, and then putting it together with a stock gasket torques to 70+ ft/lbs.
The gains from headers and exhaust and some fuel tuning are available, but don't expect much out of them. Perhaps another 10-20 hp if you got lucky. A turbo is the road to serious power, but if you don't do the metal head gasket, it won't last.
