7" is pretty small. For reference, I'm running 17"x8" up front and 17"x9.5" in the rear. The stock wheels on the car are only 7" wide. So, really. You'll be going to the same size wheel. So, max width tire would maybe be 245.
Now, stock wheels are +37mm offset, IIRC. If you have a +46mm, that's going to pull that wheel into the body of the car by 9mm. 9mm = 0.355 inches. So, I can't say how well it'd work or not work with rubbing, you'd have to test fit that. It shouldn't be too bad. It wouldn't work well with wide tires (I have FAR less clearance than that back there), but that won't be an issue with the aforementioned issues.
I'm also not sure what it'll look like with the wheel tucking in like that.
