Use 1 and only 1 gasket.
You need to check the torque carefully...it's only 29 ft/lbs. The problem you may come across is that the studs tear out the aluminium when you try to torque it again, and you might find they can't be tightened anymore. The only solutions are: 1 helicoil...a nightmare with the head on the car as you need a right angle drill and have to get it straight. 2 again drill and tap the hole slightly larger, though some have had success just driving a coarse thread bolt in there...I don't recommend it though as you bugger any chance of fixing it right later on.
There are 2 ways you can go for helicoils. First is to use a 10mm that will allow you to use stock studs and nuts. The second is a kit from Driftmotion that allows you to use (as I remember...I'm guessing a bit on size) a 5/8 dual coarse/fine thread stud that also needs helicoils, but the coarse thread is in the head and will not ever come back out. I used a set on mine, but had the head on a stand so it was pretty simple.
