Yep, when using the defrost the A/C compressor is engaged. Running the air across the evaporator will help remove moisture from the air being blown out. It's the same process that puts water on the ground when you run your A/C. When the air goes through the cooler evaporator the moisture in the air condenses on the evaporator's cooler surfaces as the air continues on to be blown onto your windshield and windows.
