I love this idea! What you're talking about would be putting a GE head on a 5S block. It's been done quite a few times but that might be taking the complication of your project to an extreme. It involves plumbing new cooling channels and similar such adaptive efforts.
How is the engine in the Geo mounted? The 5S is designed to be mounted transverse. Have you thought about what you're going to do for a tranny? If not, you might want to consider grabbing a tranny out of a Celica, already font/front.
I've got an extra 5s wiring harness and two 5s's that I've been pulling parts off of if you find yourself needing any bits.
What kind of racing do you do?

Don't know that I've ever come across a conversion harness. There are quite a few guys that are custom blending v6 OBDII harnesses into their cars so I would imagine that if you were persistant enough and good with wiring diagrams and a voltimeter you could do it yourself.
