i had the same problem with my 93 NA well, when it was NA there could be a couple of things one thing that i noticed is that when you had all of that stuff replaced what might have happend is that you got an air bubble stuck in the cooling system and when you get the car going after a little while that air bubble is the cooling system gathers steam and then wilkl sit on the thermostate and makeing it seem as if you are running way to hot. it is easily fixed by having a local shop redo the cooling system the suck everything out and make it air tight and refill the system its no big deal the other is like you said it could be a bad or old thermostate. I would as well check the fans becuase if they arent running while you are idleing then you could have a over heating problem that way so i would check that first and then get into replacing the thermostate and getting the cooling system checked over! as for the shocks my buddy and i did mine but i would get them off of ebay get the KYB AGX which is what i have and i love them and just have a shop do them it is alot less hassel and time to have them do it. less down time on the car. Good luck i hope i helped

as deuce said, all the air needs to be evacuated from the system, or you will have heating issues..Does your heater work? If the heater core is not purged of air, it will not get hot. thats a sign to look for..Purge valve is under the frunk in the center. It's white plastic with flathead screwdriver groove..
Bleeding the MR2 cooloing system takes time and patience. There's so much piping running from front to back. Need to purge radiator too from **** at right top corner.
Thermostat could be malfunction too. As far as the fans, crank it up and listen to hear if the fans kick on.
Changing struts is a hassle . You will need a spring compressor. it's not that hard, but look out. if a spring breaks loose from the compressor, it can take your head off! I would take it somewhere and bring your own struts. I got 4 way adjustable KYB AGX for $290.00/set of 4 from Ebay. Labor for install will run about $400.00...

Similar problem happen to my Mr2 a few months back, so what I did was grab a oven mit, and a towel, put it over the radiator cap, and opened it, it let all this pressure out, that the towel was blown to the side, no mess though, thank god haha, but yeah, I let all the air out, filled the resovoir back up with 50/50 and drove it like half a mile, and the temp. meter will still go up, stop, and then it will go down.

hmm

I will also say bubbles, or the thermostat... but thermostat could be narrowed down pretty easily.
