Alot of the extra wires on the 93t side is probably for things the NA wouldnt have...like a boost gauge for example.
the only real wires you need to tap into are the wires for speed sense, oil pressure, water temp, battery voltage, tach, ground, 12v power, crank sense, TVIS, VSV, etc.
Just cut the end off of the 91 NA side of the harness and start hooking the wires from the 3SGTE ECU.

Most of the colors for the important things do not change much at all through the years, even between. When I wired my 89 MR2 with the 3SGTE, 15 of the 18 or so wires I needed were the same colors on both sides.
