+25 is way too little. Also, there isn't much fender to roll on the new 07's. If anything you might get 1cm.

I believe my current setup is 20x8.5 and the offset is about +42. It sits pretty flush so +40 would be perfect.

If anything, you could always add some spacers if the +40 isn't flush enough for your taste.
