200 sounds high to me (somebody correct me if im wrong), are you sure its not running lean?

So what did you do with the cooling system? Got a fresh thermostat (dealer item please, the dual valve thermos are best) and water pump? How about the coolant iteself, what did you use, what mixture?

Also are you sure you got all of the air out of the cooling system when you filled it up?

When does it overheat? In traffic or on the hwy?

Be vary careful when overheating these motors, the aluminum head can crack or warp if it gets too hot.

Sounds like temperature gauge overshoot.

A toyota dual valve thermostat will fix that (was designed to fix it).

Make 10000% sure that all the air is out of the system. Do you happen to hear rustling water in your dash when you first take off in the morning?
