Why don't you call Toyota corporate at 1-800-331-4331 and talk to someone in customer service. Discuss with them the recommended oil viscosity and the reason behind it. Tell them what the dealer has put in the car and your feelings about this. If nothing else, you will now be on record with Toyota corporate about what oil was put in to your car by one of their dealers. If you do have engine problems down the road (and I don't think you will), this situation will be noted on your file. This may also put your mind at ease.
