higher octane fuels are only going to yield better economy if your engine can detect knock and advance the timing based on this. My Grand Prix has two different spark advance tables and based on which fuel I run it will decide which table to use. The low octane table has all the timing values in boost cut more than 60%, but the normal driving values remain close to the same.
I don't think your 5s has a knock sensor, so premium won't do you any good unless the regular you are buying is total crap.
But 17 mpg is awful, you should be able to do 20 EASY regardless of what octane gasoline you run. Ethanol also increases fuel octane, it really shouldn't have a big effect on economy. Cars that run on E85 do suffer a loss in Economy but you can run higher ignition advance and milk the higher octane (around 100) for what it's worth.
