I know what you mean. Just purchased our 08 Yaris Sedan 5-speed and am having the same results! Don't think it is an adjustment issue though. Does yours have the "Electronic Throttle Control System" (ECTS-i), if you know, which is on our 08? By defintition...

"The principle behind ETCS-i is used on all modern racing cars. When you depress the accelerator peddle, the engine instantaneously receives an electroic signal demanding more power. By replacing the traditional, less efficient cable link between pedal and engine, ETCS-i can provide better fuel economy, faster responses and smoother acceleration."

There is not a physical throttle cable any longer between the gas pedal and the engine. It is all done electronically now which causes this instant revving condition I think. I have found that it helps to let the clutch out and let it just engage and then apply the throttle although I am still not quite on to it yet. It has been 16 years since I've driven a standard trans which isn't helping either.

2000 echo has a cable and a TPS. It isn't 'drive-by-wire'.

About how high does the rpm go? I usually use the parking brake to hold the car in place, just in case if I stall it when taking off from a stop on an incline.

....Wasn't sure whether you would have the electronic system or not but it sounds like you have the same characteristics. Haven't noticed the actual RPM reading as I am just going by ear mostly when pulling away, but when starting the engine cold and after it goes off fast idle it takes a very light throttle input to make it rev to around 1800 real quick.

This system makes it quite difficult to get a smooth launch every time but I guess more practice is the only solution as there will be no adjustment for this I'm sure. I'm either too light and having the engine bog and getting chatter or too heavy and over revving.
