Personally, I have a 2015 LE I4 @ 19k mi so far.
The I4 does an adequate job getting around both town and on the highway. I'm seeing ~26 mpg combined @ 85% city. On the highway it'll usually clock out 34.9 - 36mpg @ 70 mph depending on wind, or ~40 mpg @ 55 mph.
Do I wish I had the v6? Sometimes, but my budget didn't really permit it (in the sense of what I want to spend, with want << can spend).
It does help to occasionally be able to borrow my parents' 2012 SE v6 on occasion though =).
All in all, if budget permits, go with the 6. The on highway economy measured is nearly identical (measured by trip meter vs. gallons to refill tank).
If budget doesn't the 4 still does a fairly good job, and will spin up if you demand it (and finding the various kickdowns isn't difficult. I have it down to an art as to if I want a single, double, or triple kick down on the highway already =) )
