I say get a mix of both show and go. Since you already have a V6, go in need of attention as much as show.

If you haven't done suspension and wheels yet, that should be the first order of business. As for the headlight conversion, I can let you do a test fit with my 95-96 lights when you get back.

I do not suggest the SC due to durability concerns with regard to the EBC. If it was your project car, then go for it. Otherwise, you don't want to "make it work" on your daily driver. Everything can "work", but the question is how well and for how long.
