I have a 95 T100 with V6. That 11 quarts you reference is total capacity. My owners manual say that for drain and refill - it should take 1.7 quarts.
I regularly drain and refill the trans fluid every 24K or so. I measure the amount drained so I know roughly what to put back. Usually about 2 quarts or so comes out.
Of course after refilling, you want to measure the fluid level with the dip stick. Be very careful not to overfill the trans - you can cause foaming and the like. The only way to get rid of all the fluid is with a power flush - done with a special machine at dealer or other shop.
