How do I change the oil in my manual (5-Speed) tranny? How many Quarts to add?

If it's like any other 5-speeds, you'll have two drain plugs on the tranny housing, near where thr shifter(s) is(are); one will be at the bottom, and one will be on the side @ 3/4 of the way up. You drain all the fluid out the bottom plug, then replace the plug and remove the upper plug, the one on the side high up. I remove the shifter (from inside the cab) and dribble the oil in from the top rather than making some pump arrangement you fill from underneath. But however you get the oil in, once it drips out that upper plug hole, stop filling and let the excess drip out (have a drip pan under this hole already). Reinstall the upper plug and shifter, and you're done. Make sure to use recommended weight for your given vehicle.

Is removing the shifter a pain or is it worth the time?

In my '92, it's four screws for the rectangular shifter cover "ring", and you press down on the shifter retainer ring (with a rag) and twist counter-clockwise. Pops right out. Biggest PITA is lining up the screws to reinstall the cover.
