I’ve seen a few people across social media who have been able to screen mirror on their headunits. Playing YouTube, Netflix, etc.. how would I go about utilizing screen mirroring?

I did a quick search for mirroring to a 2020 Corolla and was unable to find anything out there from the suppliers I'm familiar with. I'm not saying you can't, just that I couldn't find one. Hopefully someone here who is more familiar with the head unit in your model will have more knowledge on the subject for you. You may need to switch the head unit to get this feature.
