Some use brembo blank rotors with OEM pads.

I saw Raybestos for pads, rotors, shoes, and drums. Don't forget if doing drums to get the hardware and adjusters too.
I need calipers 🤣, pistons & everything

The powerstop looks like actual refurbished Toyota calipers and bracket, cleaned and coated black

Ignoring the brake hoses (maybe), this is what I would use.

There's no reason to use DOT 5.1 but there is no reason to not use DOT 5.1. That specific brake lubricant is safe for both rubber and metal. Make sure to double check these parts for your specific vehicle.

Probably good idea to get new hoses because of old fluid may or may not be contaminated

likely not! unless they have some corrosion coated

but it depends on the grade of ss

I'm still debating on steel braided lines. I don't need it now but I just have no clue how they will react and last.
do you know what grade they are made of
304 or 316 aircraft grade, the non-magnetic good stuff, should not have issues

Honestly I don't know. These are the ones for my 08 Camry, I'm not even sure they fit since they say JP built.. I couldn't find any for yours but someone probably makes it.

Advics is not available for the car but the basic Akebono is (ACT, not the stronger ASP). However, you might want to try the Raybestos EHT Element 3 pads, which has a stronger bite from the semi-met component along side ceramics.

None of the reman calipers on rockauto said coated, so rust might be a problem. I would pick pads separately so you get what you want. Yes I would change out the brake hoses too, you might need some clips if the existing ones are corroded. Sunsong hoses now come in Centric and Raybestos boxes, at least from what I found for a looong time. So just get Sunsong, unless you want to spend for the Toyota stuff.

Most SS brake lines are not DOT approved, AFAIK.
