dude that is a really confusing way to ask a question by putting it all in to one sentence. did you mean you took the cat off after you noticed the black on the tailpipe, or you took off the cat and now your tailpipe is black?

if your fuel mileage is good, truck runs healthy ( has nothing to do with catalytic converter), and plugs look good, than no. it's like having a fart filter down your pants: you can fart and nobody gets offended and it doesn't stink, but take that fart filter off, and boy you can let er rip. same thing.

if you're not required by inspection or emissions to have it, and you can live with yourself polluting more than everyone else, then leave it off. having it on or off only slightly affects backpressure, which isn't detrimental. the catalytic converter does nothing for the engine or EFI in this case, just the emissions.
