I am near Nashville and shopping for a 2020 Camry XSE with moonroof and navigation packages + some odds and ends. MSRP shows $34,362. Dealer is discounting it $2,098 + the $1250 cash back. Their price $31,014. According to KBB invoice for that car is $31,146. I would have thought I would be looking for a price more like $31,146 - $1250 = $29,896. What price would be realistic?

Cash back this month is $1250. Would there be any chance it could increase next month?

$2000 off MSRP is standard discounting, most dealers have it on their website..rebate depends on the state, $1250 also here in MI. Yes, I am hoping for an increase in the rebate next month!

That is a really good deal! Looks like no rebates in Florida?
Is your car MY 2020 ? New?
AutoNation website shows least expensive SE is $26985, so you may have got some options imho.

So you got your car for about 20% off MSRP which is a good way of measuring discount. In Michigan they are giving me only 13%.
