03 Toyota Camry knock sensor

I have a 2003 Toyota Camry V6 XLE put in brand new knock sensors and wire harness I still have the check engine light coming on with the code P0330 knock sensor 2 me help

Not saying the part you got was Counterfeit but a good number of Toyota,NGK and Denso parts are on both Ebay and Amazon.
The usual caveat,"If it's too good to be true..."
Do you have a scanner that has live data and has the car been driven long and far enough to re-learn the ECM parameters?
Any other symptoms besides the light/code?
Maybe you can test the KS thru the harness using a MM.

I did this job the end of April this year I change everything refresh the engine synthetic oil your new gas cap so I have a scanner that clear codes out so I connect the wire drive the car anything over 55 or 65 the light comes on so when the light comes on my car like it down shifts a little bit so when I put my scanner I erased the code the car starts running fine then the light comes back on again a minute or two

Erasing codes shouldn't change how a car performs, the problem ( if it exists) is still there.
Can you turn off the Overdrive on that transmission. I'm thinking what your feeling is it shifts up into overdrive and the rpm drop creates a greater temporary load on the engine causing a ping the KS picks up.
If you can turn it off before leaving your driveway and see if keeping the rpms up prevents the code
from appearing /CEL on.
Just thinking out loud.

Okay so when I drive my car out of the driveway when that light comes on after I'm doing 55 Mi or 65 MI that code P0330 the car hesitate a looks like it's choking but then when I put the computer on as I'm driving and I turn off the code you fill the pickup right afterwards so I took the car to the Toyota dealer and they tell me it could be the sensors or the wire harnessed then I took it to another Toyota dealer and they tell me it could be the computer so to tell you the truth I don't know what to do

The KS is a digital mic sending data to the ECM to adjust the timing for the situation to stop or avoid pinging/detonation. If the KS is sketchy by that part or the harness then the info the ECM can be questionable too.
Since erasing a code "generated by the ECM" seems to change the engine performance I guess it's possible the ECM has defaulted to OEM timing parameters until it gets new info from the KS and it starts the cycle all over.
Try the transmission test I mentioned if possible ( I don't know your trans but most have a button to prevent the car from going into overdrive) and see if anything changes. The ECM has to respond to load variations and a drop in the rpm by going into overdrive increases load ( lugs) the engine even if it's only momentarily increasing the chance of a ping the KS would pick-up setting off the code again.
