2001 Camry periodically running hot

So, I've got a 2001 Camry with the 2.2L.

So far, I have:
  • Flushed the radiator and replaced the coolant.
  • Got a new DENSO radiator cap. (However the fitting on the existing rad is a bit wonky).
  • This morning replaced the thermostat.
  • Water and oil pump and timing belt were replaced within the last year.
The symptoms that remain are that it will periodically spike in temp,...and when this happens the heat isn't working. (Just noticing this now that it's cold and we want heat.)

I think the radiator itself is aftermarket, was on the car when I got it. It's mostly a plastic housing. I was planning to replace that next, just wondering, if the temp spike with heat loss is a pattern that points to anything specific, aside from the radiator???

I've been nursing an overheating issue, just wondering if anyone with experience could confirm.

OK, so now my 2001 Camry is running "cold". After a half hour of driving, the needle is way down by the C(Cold). It drifts between that and back to normal range now.

Would a thermostat stuck open actually drop the temp down that low?

Another thought I've had is that the temp sensor is faulty.

Anyone else had this happen?
