How much of a temp swing on hot-cold days is normal

Better quality thermostats will "fail open" to help prevent overheating. Combine that with air into the radiator while driving down the road and the fans that kick on when the temp gets too high will explain why on hotter days it stays mid-level. On colder days the thermostat is not closing enough to allow the coolant to warm up to operating temperature and compensate for the cooler air blowing into the radiator while driving down the road.

I am curious to know if you ever noticed your heater not working as well as when new. Because I believe you can drive around in the summer and never notice a stuck open thermostat. In the winter you get the symptoms you describe plus heat that gets "warm" at best. When you fix this, you might be surprised at how hot your heater can get.

This is all assuming the coolant level is correct and you have no leaks in the system. It sounds like all is ok there. With my camry, the only time I saw the temp gauge get up near hot was when the heater core failed and coolant leaked out, and when I replaced a thermostat but didn't get all the air out of the system. There was no damage after those incidents.
