Most new buyers will be getting first two years of service/maintenance free so I guess clock starts ticking (more so after 24 months). Along with dealer service charges.

As for if you want to have a dealership do the work, an independent shop, or do it yourself, that's largely a matter of preference. I use Toyota for the first two years of free maintenance- but then use a trusted independent mechanic for all other work. Same for my wife's Honda- although she didn't get free maintenance. If you know how to do it yourself and have the time/tools- that's probably best. That's the best way to make sure things are done right.
As for time or mileage- always go by whichever one comes first.

Toyota calls for 10,000 mile oil/filter change intervals (or yearly- if you don't drive 10,000 miles in a year) for regular operating conditions. They recommend every 5,000 miles if you fall under the "special operating conditions".
Personally, I think 10,000 is far too long. I change the oil in my cars every 5,000 miles or six months. Oil is cheap, engine overhauls aren't. The oil that Toyota calls for in the 2025 Camry is very thin- which is fine- but probably should be changed more often than every 10,000 miles- especially if you make a lot of short trips.
Check your oil each time you pump gas- and if you ever see a white substance on the underside of the oil fill cap- that's a sign that your oil should be changed.

Toyota calls for the engine and inverter coolant to be changed at 100,000 miles, then every 50,000 miles. The inverter coolant is the same fluid and is relatively easy to change. Is that what you meant by 'hybrid battery fluid'?

I don't see a brake fluid intervals in Toyota's maintenance guide. They call for inspecting the brake linings, pads, and discs every 5,000 miles and an inspection of the brake lines/hoses every 15,000 miles.
I have always changed my brake fluid every three years or 30,000 miles. Going longer than that, at least in my climate, increases the risk of moisture getting into the fluid and causing problems.
